Tasty Thursdays: Crispy Noodles

I love noodle dishes–there’s something so comforting about pho, ramen, chicken noodle soup, and the like. The tasty broth, the slurpy noodles, being able to wrap your hands around a warm bowl… so good.

But what if it’s warm out, and having a hot noodle dish only makes you sweat? Enter crispy noodles.

At Rose Pho, crispy noodles serve as a bed for saucy stir-fried seafood. Breaded fish, mussels, calamari, and shrimp mingle with carrots, cabbage, mushrooms, and (just a tad too much) celery and cilantro.

Just look at it. Isn’t it such a colorful dish? The “flower” on the side is a work of art, too.

The noodles are crunchy on the outside of the “nest” and get softer closer to the center where the warmth of the stir fry ingredients and the moisture of the sauce have soaked in. The result is a blend of flavors and textures that work well together, even if they’re a tiny bit messy to eat.

This is definitely not a meal you order when you’re trying to impress someone (noodle bits all over the place!) but they’re yummy, so if you’re not on a first date or a business lunch, go for it! Also, this serving is pretty humongous. Not to worry though. As leftovers, the noodles don’t stay as crunchy, but then it’s like you’re having normal fried noodles. Still tasty!

Crispy noodles are a fun, different way to enjoy noodles–plus a stir-fry!–no matter what the temperature.
